Rhubarb

This is the first Rhubarb harvest of the year. Rhubarb is high in fiber, calcium, vitamin K, vitamin C, iron and magnesium. It’s very sour but that means it works well in both sweet and savoury dishes, and lets be honest, who doesn’t love rhubarb crumble. It’s is a natural laxative though so don’t go too crazy 😉 The leaves look amazing but don’t be tempted to eat them, they contain oxalic acid which is poisonous.
